Apple Muffins
Makes 12 muffins
1 egg
1/2 cup milk
1/4 cup vegetable
oil
1 cup apple, grated
1 1/2 cups all purpose
flour
1/2 tsp cinnamon
1/2 cup sugar
2 tsp baking powder
1/2 tsp salt
Topping
1/3 cup broken nuts
1/3 cup packed brown
sugar
1/2 tsp cinnamon
How to make
1. Grease muffin tins.
2. Beat egg in a bowl.
Stir in milk, oil and apple.
3. Mix in rest of
ingredients until flour is just moistened. Batter should be lumpy.
4. Fill muffin tins
2/3 full. Sprinkle with topping. Bake in 400º F oven until
golden brown, about 20 minutes.
