Banana Muffins
Makes 12 muffins
2 cups all purpose
flour
5 tsp baking powder
1/2 tsp baking soda
1 1/2 cup rolled oats
3/4 cup white sugar
1/2 cup lightly packed
brown sugar
4 ripe bananas
2 eggs, beaten
1 cup milk
6 Tbsp margarine,
melted
How to make
1. Combine flour,
baking powder and baking soda in a large bowl. Sir in oats and
sugars. Set aside.
2. Mash bananas in
another bowl. Add egg, milk and melted margarine. Mix well.
3. Stir banana mixture
into flour mixture. Stir just until blended. Do not over mix.
4. Fill 12 greased
muffin tins. Bake in 375º F oven until golden brown, about
25 minutes.
Magic Muffin Middles
¶ Fill muffin
tins halfway. Spoon 1 tsp peanut butter into centre and then
top it with muffin mixture.
¶ Add cubes of
cheddar cheese, dried fruit or jam in the middle of plain muffins.
