Berry Butter
Makes 10 oz
3 cups fresh blackberries
(or any berry), mashed
2 Tbsp lemon juice
1 cup sugar
How to make
1. Put berries in
a bowl. Mash with fork.
2. Combine berries
with lemon juice and sugar in a saucepan.
3. Heat and stir on
medium to high heat until sugar dissolves.
4. Bring to a slow
boil over medium-low heat. Heat for 15 minutes. Stir often to
avoid burning.
5. Drop a spoonful
of fruit on a cold plate and cool. When jam is cool enough, you
can pull a spoon through it and leave a bare line.
6. Fill hot, clean
jars to with 1/2 inch of the top rim.
7. Screw on lid and
tighten. Cool for 24 hours.
8. Freeze or store
in fridge and use with 7 days.
