Broccoli Bake

Makes 8 normal servings or 2 cyclists' portions

12 oz pasta, uncooked

20 oz broccoli, chopped

1/2 cup carrots, chopped

2 cups plain yogurt

1 cup Parmesan cheese

1/2 cup cottage cheese

2 eggs, beaten

1/2 cup milk

2 tsp salt

1 tsp thyme

1/2 cup cracker or bread crumbs

2 Tbsp margarine, melted

How to make

1. Cook pasta according to package directions. Pour cooked pasta into a strainer in sink

2. Fill half a large pot with water. Bring to a boil

3. Add broccoli and carrots. Cook for 4 minutes. Drain out all water

4. Beat eggs in a small bowl. Stir into pot. Add yogurt, cheeses, milk, salt, thyme and noodles. Mix well

5. Put noodle mixture in casserole dish

6. Mix together bread or cracker crumbs and melted margarine. Sprinkle atop casserole

7. Bake in 350º F oven until heated through, about 45 minutes
