Butter Tarts
Makes 6 large tarts
Crust
1 cup of flour
1/8 tsp salt
1/2 cup butter
2 Tbsp cold water
Filling
1 egg
1/2 cup brown sugar
pinch of salt
1/2 tsp vanilla
1/4 tsp lemon flavouring
(optional)
1/2 cup raisins
1 Tbsp butter, melted
How to make
1. Combine flour and
salt in a bowl. Cut in 1/2 cup butter with 2 knives until pieces
are the size of small peas.
2. Sprinkle with 1
Tbsp cold water. Toss with fork. Push to side of bowl. Repeat
until all of mixture is moistened.
3. Form into a ball.
4. Lightly flour surface
of table. Roll out dough.
5. Use jar lid or
rim of cup to make circles. Cut to fit tart pan. Place circles
in tart pan.
6. Beat egg in bowl.
Slowly add brown sugar, salt, vanilla, and lemon flavour.
7. Beat until frothy.
8. Fold in the raisins
and melted butter.
9. Spoon mixture into
a pastry-lined tart pan.
10. Bake in 375º
F oven until filling is set and the crust is golden brown, about
12 minutes.
