Cauliflower Casserole

Makes 6 normal servings or 1.5 cyclists' portions

1 cup white or brown rice, uncooked

2 Tbsp margarine

1/2 lb carrots, chopped

1/2 lb mushrooms, sliced

1 onion, chopped

2 Tbsp lemon juice

1 head cauliflower, broken into small pieces

3 cloves garlic, chopped fine

1 tsp basil

salt and pepper to taste

2 cups grated cheese of your choice

How to make

1. Cook rice

2. Melt margarine in a frying pan over medium heat

3. Add carrots, mushrooms, onions and lemon juice. Cook until onions are soft and mushrooms are tender. Stir often

4. Add cauliflower pieces, garlic, basil, salt and pepper. Turn heat to medium-low and cook for 15 minutes

5. Combine vegetables, cooked rice and cheese in a large casserole dish. Mix well

6. Cover and bake in 350º F oven for 30 minutes
