Hearty Sausage Casserole
Makes 6 normal servings
or 1.5 cyclists' portions
8 slices bacon, cut
into bite-sized pieces
1 lb turkey sausage,
cut in quarters
2/3 cup celery, chopped
1 onion, chopped
2 - 14 oz cans baked
beans in tomato sauce
2 tsp Worcestershire
sauce
1 clove garlic, crushed
1/2 tsp dry mustard
1 tomato, chopped
in large chunks
1 1/2 cups cheddar
cheese, grated
salt and pepper to
taste
How to make
1. Heat frying pan
over medium heat. Add bacon and sausages and cook for 2 minutes.
2. Add celery, onion
and green pepper. Cook until onions are soft but not browned.
3. Mix beans, Worcestershire
sauce, garlic, dry mustard, salt and pepper in a large casserole
dish.
4. Add tomatoes and
all pan contents to casserole dish. Mix well.
5. Cover and bake
in 375º F oven for 25 minutes.
6. Remove dish from
oven and sprinkle on cheese.
7. Return to oven
uncovered. Cook until cheese is melted, about 10 minutes.
