Holiday Squares
Makes 54 squares
3 cups flour
2 tsp baking soda
1 1/2 tsp cinnamon
1/2 tsp salt
1 cup sugar
1/2 cup vegetable
oil
2 tsp vanilla
2 large eggs
1 - 14 oz can crushed
pineapple with juice
3 cups carrots, grated
2 Tbsp orange rind,
grated
How to make
1. Combine flour,
baking soda, cinnamon and salt in a large bowl.
2. Combine sugar,
oil and vanilla in another large bowl. Mix well.
3. Add eggs one at
a time to sugar mixture. Beat well after each egg is added.
4. Stir in pineapple
with juice, carrots and orange rind.
5. Stir pineapple
and carrot mixture into the flour mixture.
6. Gently mix until
the ingredients are moistened.
7. Spoon cake mixture
into a greased 13 inch by 9 inch pan.
8. Bake in 350º
F oven until done, about 30 minutes.
9. Cool in pan on
a rack. Cut into squares and serve.
