Laura's Casserole
Makes 8 normal servings
or 2 cyclists' portions
1 cup brown rice,
uncooked
3 cloves garlic, chopped
fine
1 cup onion, chopped
1 - 10 oz can mushrooms
1 tsp each dried basil,
thyme, marjoram, cumin
1 - 19 oz can beans
3 eggs, lightly beaten
2 cups cottage cheese
1 cup mozzarella cheese,
grated
1/4 cup feta cheese
2 Tbsp soy sauce
salt and pepper to
taste
Topping
2 tomatoes, sliced
thin
How to make
1. Cook rice
2. Heat oil in frying
pan over medium heat. Add garlic, onion, mushrooms, basil, thyme,
marjoram and cumin. Cook until onions are soft
3. Combine all ingredients
except topping
4. Spread mixture
into a large, greased, baking pan
5. Top with tomato
slices
6. Bake uncovered
in 350º F oven for 40 minutes
