Lentil Vegetable Soup
Makes 6 normal servings
or 1.5 cyclists' portions
1 Tbsp vegetable oil
1/2 lb ground beef
1 cup dry lentils
8 cups water
1 tsp salt
pinch of pepper
1 onion, chopped
1 carrot, chopped
1 stalk celery, chopped
2 cups tomatoes, chopped
1 clove garlic, chopped
1 bay leaf
2 tsp basil
How to make
1. Heat oil in large
pot over medium heat. Add ground beef and cook until brown. Pour
off all the fat
2. Add lentils, water,
salt and pepper to beef. Cook for 30 minutes
3. Add rest of ingredients
to beef. Cook for 1 1/2 hours.
4. Add more salt and
pepper to taste
