Meatless Spanish Rice
Makes 16 normal servings
or 4 cyclists' portions
4 cups white rice,
uncooked
2 1/2 Tbsp margarine
3 onions, chopped
2 green peppers, chopped
2 - 28 oz can tomatoes
1 - 14 oz can tomato
sauce
How to make
1. Cook rice in large
pot
2. Melt margarine
in a frying pan over medium heat. Add onions and green pepper
and cook for 4 minutes
3. Stir in canned
tomatoes and tomato sauce. Cook until heated through
4. Mix with cooked
rice in pot
