Skillet Potatoes
Makes 5 cups
3 Tbsp margarine
2 cloves garlic, chopped
fine
1 cup celery, sliced
1/2 cup onion, chopped
1 - 10 oz can condensed
chicken broth
1/2 cup water
4 cups potatoes, peeled
and chopped
1 cup carrots, chopped
dash of pepper
How to make
1. Melt margarine
in a frying pan over medium heat.
2. Add garlic, celery
and onion. Cook until soft. Stir often.
3. Add chicken broth,
water, potatoes, carrots and pepper.
4. Bring to a boil.
5. Turn heat to low.
Cover and simmer until potatoes are tender, about 15 minutes.
6. Turn heat to medium.
Uncover and simmer until broth is slightly thickened, about 5
more minutes. Stir often.
