Quick and Easy Vegetable
Soup
Makes 12 normal servings
or 3 cyclists' portions
8 cups water
3 potatoes, chopped
3 carrots, chopped
1 bay leaf
1 tsp salt
1/2 tsp pepper
1/2 tsp paprika
2 Tbsp margarine
1 onion, chopped
1/2 cup green beans
or peas
2 stalks celery, chopped
2 tomatoes, chopped
How to make
1. Put water, potatoes,
carrots and spices in a pot
2. Bring to a boil
3. Turn heat to low
and simmer for 15 minutes
4. Melt margarine
in a frying pan over medium heat
5. Add onion, beans
and celery. Turn heat to low and cook for 8 minutes
6. Add into pot with
tomatoes. Simmer for 15 minutes
